Oatmeal Buttermilk Pancakes
Oatmeal Buttermilk Pancakes
I enjoy the traditional fluffy pancake. These are an alternative. Buttermilk makes them moist and spongy, while the oats give them a slightly chewy texture. We made them this morning and ummmmmm they were good!
1 c Old Fashioned oatmeal
1 c buttermilk
1/2 cup milk
2 eggs
2/3 cup flour
1 tsp soda
1 tbsp sugar
salt
1/4 cup melted butter (cooled to room temp)
Mix ingredients as given.
Heat oiled griddle until a drop of water dances when dropped on it.
Keep griddle oiled between pancakes.
Makes 6.
Optional: You can add a few chopped pecans to either the batter or syrup. I buy frozen blueberries to have on hand for just this.
